If you’re not Canadian, chances are you’ve never had a Nanaimo bar. They’re delicious squares full of chocolatey and creamy goodness, and they’re one of my favourite confections in the world. It’s so hard to stop at just one Nanaimo bar, and while you should probably do that, I’m not going to stop you. Here’s one of my favourite recipes to make these delicious treats, and I thought I’d share it here with you in case you were traveling to any Canadian Christmas parties this year and needed something to bring. It takes a bit of work to make a Nanaimo bar, because of the layers, but it’s not that hard.
For the First Layer:
½ cup unsalted butter
¼ cup sugar
6 Tbsp cocoa powder
1 beaten egg
1 ½ cup crushed graham crackers
1 cup of shredded coconut (I use unsweetened, but do whatever you like!)
½ cup chopped nuts (this is optional, but when I add nuts I usually use walnuts)
Melt the butter, sugar, and cocoa powder together in a saucepan. Add in the egg while whisking, and let it cook for a minute to thicken the mixture. Take everything off the heat and then pour in the remaining ingredients. Press the crumb mixture into an ungreased 8” x 8” dish.
For the Second Layer:
½ cup unsalted butter
3 Tbsp cream
2 Tbsp custard powder or vanilla pudding powder
2 cups icing sugar
Cream everything together until it is light and fluffy. Spread over the first layer and refrigerate while preparing the last layer.
For the Last Layer:
4 oz semi-sweet chocolate
2 Tbsp unsalted butter
Melt both ingredients over low heat, and then let cool. Once it is cool enough to handle but not so hard that it is no longer liquid, pour it over the fluff layer and then refrigerate.
